Our Favorite Summer Recipes
07.31.2024Justi: Corn Dip: 3 cans mexicorn 2 cans black beans drained and rinsed ½ (or whole per preference) red onion chopped 1-3 jalapenos chopped (de seed per preference) 1 cucumber chopped ¾-1 bottle of spicy ranch dressing Refrigerate and enjoy. Emily: Tomato, Corn, and Avocado Salad. Recipe Link. Jenn: Watermelon Feta Salad with Mint. Recipe Link. Sarah Iverson: Green Goddess Hummus. Recipe Link. Amy Jo: Sun Tea: You’ll need: Any lidded glass jar -- you can put those canning jars to use for individual servings Cold water Favorite tea (bagged is easiest) Fill jar with cold water, add two tea bags per quart of water, hold tea bag strings while securing lid tight. Leave in the direct sun for at least four hours, or you can leave it all day if you want it stronger like I do. When ready, hold your strings, open the jar, pull out tea bags and refrigerate until chilled. Sweeten if desired and enjoy! “Pro-tip”: if using individual jars to serve in, leave a little room in the jar to add ice and garnish when serving. Katie T: Summer Pasta Salad. 2cups spinach leaves 1/2 cup julienne fresh basil leaves 1 clove minced garlic 3 cups halved cherry tomatoes 12 ounces fresh mozzarella in water 1/3 cup grated Parmesan 1/2 cup extra virgin olive oil 1 box orecchiette pasta or other small flat shaped pasta. Directions: Drain and dice the mozzarella into small pieces, the smaller the better. Combine the oil and garlic, set aside. Wash and dry the spinach. Cook pasta and drain well. Immediately place the pasta in a large serving bowl. Add the oil, garlic, spinach, mozzarella, tomatoes, basil, and seasoning to taste. Toss quickly to melt the mozzarella and wilt the spinach. Serve immediately sprinkling with the Parmesan at the last minute. Lauren: Summer Salad for the best barbeque cookout (fan favorite for a guest pool/lake day) Ingredients: Apple, Pear Summer salad (All ingredients optional, modify to any allergies) Greens: 1 Bag of Kale, 1 bag of Mixed Greens Toppings: Container of Goat feta cheese, Sliced up in squares (Apple, pear, strawberries), Cup of Almonds, Cup of Cashews, TBSP Chia seeds,1 medium bag of Craisins Dressings; Red Wine Vinaigrette, Poppy seed dressing (Or salad dressing of choice) Mix both into the salad bowl
